The Canadian city of Ontario is known to produce some of the great varieties of Ice wines all across the world. An Ice Wine is the rare quality of dessert wine that is made from frozen grapes. Under the chilling temperature of -10 to -12°Celcius, the grapes are hand picked and allowed to ferment for months to produce Ice wines. As the grapes are frozen, they contain a highly concentrated mixture of sugar and acids which accounts for its rich taste which makes it different and exceptional from other wines.
Generally grapes used to produce ice wines include Riesling and Vidal though lately the red grape Cabernet Franc is also been used to make red ice wines. Riesling Ice wines have more acidity than Vidal ice wines. However Vidal grapes have become a popular choice for ice wines due to their tough skin required to survive long hanging period.
Available as Vidal, Riesling, Cabernet Franc and Oak aged, ice wines must be consumed with the right kind of food. To have an enriching experience one must know the art of pairing food with the type of ice wine. Originally there weren't very many breeds of domestic dog; just a few hunting, herding, and guard types. Over the centuries, humans developed new types/breeds to fill various other needs they had. Early day monks in China, Tibet, etc. developed monestary dogs, with focus on physical traits they found to be of spiritual/religious importance. About 150 years ago mankind saw the fastest and largest "explosion" of new breeds coming into being. Most of these newer breeds were a result of the day's nobility/aristocracy's passion for showing dogs and as a status symbol for those who could afford to keep a dog as a luxery item without said dog having to earn its keep (the "lap dog" breeds thus came into being). They also seemed to enjoy manipulating genes to create such unatural traits as found in English Bulldogs, Bedlington Terriers, and numerous other breeds. Today, new breeds are still being created (for better or worse) although it seems most of these "designer Breeds" may be the result of money hungry "casual" breeders who just like to see what happens if you mix this breed with that one. And that's a pretty sad excuse to create even more unwanted pets in todays world.
