Italian Pork Sausage: It's What to Make for Dinner

Although it has Italian origins, Italian pork sausage has become a universal favorite. Whether on a pizza, in a calzone, in a Bolognese, meatballs, meatloaf, or in a bun; it's juicy, meaty decadence keeps us coming back for more. Enjoy Italian pork sausage by making it yourself and using it in a fresh new way. Any way you slice it, Italian pork sausage is what to make for dinner.

Authentic Italian Sausage

This makes five pounds of sausage.  Scale up or down to suit your family's needs.  Refrigerate up to three days or freeze up to three months.

Ingredients:

• 2 ½ lbs. well-marbled pork butt
• 2 lbs. slab bacon or pork jowls
• 1 ½ tbs. kosher salt
• 1 tbs. fresh ground black pepper
• 1 ½  tbs. fennel seed
• 2 tbs. crushed red pepper
• 1 tbs. sugar
• ½ of a large onion, chopped fine
• 1 tablespoon fresh sage chopped fine
• 4 cloves of garlic, minced
• Casings (natural sheep casing is best, talk to local butcher shop for these)

Directions:

Mix all of the ingredients together thoroughly in a large bowl and refrigerate overnight (this step is crucial to maximum flavor development). Now run the mixed sausage through the grinder one more time with the stuffer attachment and stuff into natural hog or sheep casings, if desired.

What ingredients needed to make Venison Sausage Patties, from pure vesison sausage.?

Was given 1 lb. of deer sausage, need to know what to mix with it for some breakfast sausage patties.
What I have is pure, unseasoned, ground deer meat. (I am also looking for a good marinade for deer steaks.)

If it is pre made sausage then slice the casing open and for into 1/2 thick patties and fry Tanks for clarifying to season sausage I use salt pepper lemon pepper Cayenne pepper and liquid smoke. To marinate Use a mix of soy & teriyaki sauce with some worstechire sauce and lemon juice if I pan fry. If I am grilling the steaks I rub w/ salt and pepper after a 12 hr soak in milk
