Will adding vinegar make prosciutto more tender?
I am making my own pizza and one of the key ingredients to the topping is prosciutto. Problem is, when I'm finished baking the pizza and when I serve it, the prosciutto becomes a problem for the whole pizza because it's quite tough to cut.
I was thinking that, if I put my prosciutto to marinate in something containing vinegar, lemon juice, or something else sour will make it more tender and easier to cut when done. Which of the above should I use?
I wouldn't recommend marinating prosciutto in vinegar. Try cutting it up in smaller pieces before putting it on the pizzza. Or place it on the pizza just before it is done to minimize it's crispiness from overcooking.
